Inviting friends to share in your pizza obsession is a great way to try new things. Ask someone what they would like on a pizza and you never know what they might come up with. Let me take you back to earlier in the day…
What’s the first question a guest asks when you invite them for dinner? “What can I bring?” My standard response is…”Just yourselves.” Last Saturday I was running behind when my sweet friend posed this question. So I said, “An appetizer, a light snack before pizza would be great.” Man, am I glad that I did because a new pizza was born from this simple request.
She showed up with what she calls “Crack Dip.” It is her knock off version of the herb dip from Carrabas that they serve before a meal. Drizzled with some olive oil and served with bread it was a great pre-pizza snack. As we made pizzas and asked for suggestions, one friend requested the crack dip herbs on a pizza. What a great idea!! We used an olive oil base sprinkled with crack dip, topped it with all the good cheeses, a dash of rosemary and added some sun dried tomato for sweetness and color. Simple pie, big results. We all loved it.

To make the “Crack Dip” simply combine 2 Tablespoons of garlic salt and a drizzle of olive oil with 1 Tablespoon of each of the following to create a dry paste:
- Crushed Red Pepper Flakes
- Crushed Black Pepper
- Dried Oregano
- Dried Rosemary
- Dried Basil
- Dried Parsley
- Dried Minced Garlic
You can sprinkle this on your pizza to create The Bailey, or put it in a small shallow dish with olive oil and dip bread in your creation. Either way you will not be able to get enough!
